The rice sounds interesting, but SunnyD is new to me, maybe orange juice. I love the Caprese salad and use mozzarella slices for mine and add slices of red onion. The homemade ricotta sounds pretty easy and definitely cheaper to make and is something to try. I love, love eggplant but have never seen Japanese.
