Creole corn and okra


This first note has nothing to do with corn and okra. Just wanted to share that I bought corn tortillas at a local Mexican market the other day. They are wonderfully thick and flavorful. I used one as a quasi taco today for a sandwich of egg salad. I put it directly on the gas burner of the stove for about 1 minute per side. Did I tell you before how happy I am to be back to gas cooking?

I used equal amounts by weight of corn, okra and tomato. That makes it easy. Cook it up. Then just season it with salt and pepper. After serving it, add your favorite hot sauce.

    OK this is strange - I too had a twilight moment regarding corn, this morning in fact - a post coming soon - but mine did not involve okra - a vegetable I know little about, so I'm happy to learn about it here - sounds good and I'm going to try it.

    I did find "cut" okra (it's 1/2 inch pieces) frozen at Safeway this afternoon. In a couple of days I'll make the Creole dish. You'll be the first to know.

    Such a great Southern dish. Very reminiscent of a dish a friend of mine's mom used to make us. They were from Alabama...they loved their okra!!

    Your corn sounds wonderful Stephen. I have to learn to like okra. Recipes like yours might help me over come my prejudice. I'm sorry you have difficulty with the italic print. I can't change it because of the work involved. I've been asked to keep the format of my blog consistent and one small change would have to be made in over a thousand places.     Never had gas utilities before I moved to Tennessee. I can't imagine living without a gas furnace, water heater, and stove now. So I KNOW you are happy again.
