Leftover night



Leftover night. Some smoked catfish and potatoes from yesterday. Some creamed corn. Some okra. I had a Paula Deen episode on in the background the other day and she was rummaging around her fridge using up leftovers. This particular dinner on our part was one of the most successful use of “stuff” I think we’ve ever come up with.

I ain’t gonna post this as a recipe, it’s such an eclectic bunch of ingredients that no one else will have. But you’ve got your own. I think this post goes as much to the heart of my culinary philosophy as anything could: use your instincts, be creative, be bold (what can go wrong with good ingredients?).

Here’s what I did:
Mashed up the potato slices with some buttermilk.
Chopped the smoked catfish into very small pieces.
Added 1 beaten egg, breadcrumbs, salt and pepper.
Formed cakes.
Sauteed them in butter and olive oil.
Ate them.

Here’s what Peter did:
Mixed together creamed corn, okra and some halved cherry tomatoes from the garden.
Nuked it for 90 seconds.
Made a sort of streusel topping with melted butter and breadcrumbs.
Put it under broiler for a couple of minutes.
Helped me eat it up.

I too like to use leftovers to create many different meals. I like the challenge of looking in my refrigerator and figuring out something to make with only what I have on hand. Sometimes it works out, sometimes it doesn't. Your experiment looks like it worked out very nicely. I love what you did with the potatoes. You can't really go wrong with potato cakes.

Yummy! And buttermilk! That was this week's challenge item. Also, your cakes look much better than the ones I experimented with earlier this week.

Oh my god, Stephen! I want dinner at your house! Smoked catfish??!!!!!! I love catfish but have never seen smoked catfish. Did you smoke it yourself? If so, how? I love smoked fish and have to have this.

Leftovers, they're great and you did yours up just right. Wonderful thing with the potatoes and catfish. This would be good to try with salmon too, a few potatoes and buttermilk with egg, etc. Food like this is great; it's always fun to experiment!

Peter came up with a good side dish also! Simple and good, spruced up with that streusel topping. Now I am positively drooling!!!

i love seafood cakes! Ive never tried catfish yet, but sounds like a great idea!
