Colcannon

Okay, colcannon is apparently a Gaelic word meaning white-headed cabbage. Peter and I have made many variations of this over the years. Traditionally it is mashed potatoes with cabbage or kale. Our most recent version (last night) was made with collards and mashed potatoes. That's all the recipe you need. Make your favorite mashed potatoes, cook some greens, put them together. You are done.

I adore anything mashed with potatoes... my favourite is roasted garlic and mustard!

This is one I have heard of but have never tried. Seems like a great side dish for home-smoked pastrami.

I love colcannon. I always add bacon to mine because there is no need for an excuse to add bacon... hehe.
Congratulations on the book. Would it be available in the UK?

Yum yum yum! My Irish Dad made bubble and squeak, basically the same thing, except that it was leftover taters and cabbage fried up for breakfast. I haven't had that since my Dad died 19 years ago... time to buy myself a cabbage!
