Creamsicle ice cream with fudgsicle sauce




Technically speaking this may be more of a sherbet or a granita as I don't own an ice cream machine. However, by using some creative mechanics, it became a lovely thing. The first time I made this (recipe invented by me and then lost) I was disappointed trying to get adequate "orangeness" in it. My solution? Read it  below.
The sauce is my own creation as well. I was inspired by my childhood memories of these two things being my favorite icy cold treats.

Creamsicle ice cream

1 cup SunnyD - original
zest of one large orange
1 1/2 cups heavy cream
1/2 cup half-and-half
1/2 cup pasteurized egg product
1 1/2 teaspoons vanilla extract
2/3 cup sugar

Preparation:

Combine all ingredients in a blender; process until smooth and well blended. Place in a chilled glass bowl and put it in the freezer. Every 30 minutes or so get the bowl out and mix it up with a hand-held mixer. This will help reduce ice crystal build up and contribute to your having a nice creamy final product.
Makes about 1 quart.

Fudgsicle sauce

Don't be put off by the xanthan gum. Read the label on a container of commercial ice cream. Yep, there it is. It is a natural product that brings texture to the party.

4 fudgsicles (yes, you can still get them)
3-4 Tbs heavy cream
3/4 teaspoon xanthan gum

Melt the fudgsicles and then let them cool (what you have will be very thin). In your food processor, combine it with the cream. With the motor running, sprinkle in the xanthan gum. You're done. You can serve this warm or cold. I prefer cold.

This is the way to my husbands heart. Creamsicles often come up in his conversations when talking about childhood memories.With fathers day coming up I think it will be one of the desserts on the list.

I love creamsicles, they remind me of my child hood too. My grandma had this big freezer out in her breeze way and we would go out there and lift up the huge lid to get them...it took two of us. Then here in Sarasota I would take my daughter to this orange grove that had a swirl cone of vanilia soft serve ice cream and orange sherbert...it was my childhood all over again! This sounds like it would take me there too! YUM!

This looks pretty amazing ,and we have a GREAT ice cream maker our friends gave us when they developed diabetes and decided to cut back on sugar! (We are trying to pace ourselves with it! ;) ) I used to LOVE Creamsicles.

Creamsicles so remind me of growing up.. and so do fudgsicles too for that matter. This is like a blast right back to the past.. love it!

These sound amazing, Stephen. I'm trying to reinvent creamsicles for the Fox and I think you are closer to being there than I am. Lacking a segue, cumin is used in almost all Moroccan cooking. I wanted the cayenne to carry this show, however. Cumin certainly could be added and would certainly be appropriate. Have a great day. Blessings...Mary

Sounds good, I'll have to try it in our ice cream machine. It's a Cuisinart that makes ice cream in 20 minutes.

That's cool and all but it really loses the nostalgic aspects of remembering my dad sweating his ass off hand cranking the ice cream machine while my mom refreshed ice and salt for what seemed like hours.
