Dill pickles







A person can buy excellent dill pickles in practically any store. As with so many other things, though, there is a taste and satisfaction to be derived from making your own at home. It isn't complicated.




You will need:


4 cups water
2 1/2 cups white vinegar
1/3 cup kosher salt
2 1/2 Tbs sugar
1 tsp cumin
1 tsp peppercorns
3/4 tsp turmeric
3 whole cloves
1 medium onion, sliced
1 large jalapeno pepper, sliced with seeds
8 garlic cloves, peeled
1 bunch dill
1 tsp dried thyme
10 Kirby cukes

Put everything except the cukes into a pan and bring to a boil. Drop in the cukes. Let them sit on your kitchen counter for 24 hours. Refrigerate for 3-5 days. Then eat.

When they sit on the counter, should they be covered? Does it matter?
My grandma used to can her own pickles....store bought pickles are just not the same :)

Yes, I concur with the taste and satisfaction thing and make my own pickles now and then. I like the ingredients in your recipe and am thinking about adding jalapeno to mine. I also make sweet pickles out of dill pickles.
